Nina's Breakfast Cookies
When my 4 year old son Sam went to my mom's house a few weeks ago, she came up with a wonderful kid-friendly recipe that our whole family could enjoy! These are SO EASY to make and I love that you can use these as a special treat or a special breakfast option. Anytime I can call a treat "healthy", that's definitely a mom win in my book!

WHAT YOU NEED (Yields around 20 cookies):
- 2 C oats
- 3 ripe bananas (mashed)
- 1/3 C applesauce
- 3 Tbsp dairy-free milk
- 1 tsp vanilla
- 1-1.5 tsp cinnamon
- 1/2 C dairy-free chocolate chips
DIRECTIONS:
- Preheat the oven to 350 degrees.
- Combine all ingredients in a large bowl until ingredients are well-combined and forming a "cookie dough" like batter.
- Place large spoonfuls of batter onto a greased cookie sheet for 15-20 minutes.
We stored these in an airtight container in the fridge for up to a week! I know y'all will love this recipe and Sam and Emma's "Nina" was excited to share it with you all!
