Homemade Whole-Wheat Bread (Dairy, Egg, Soy free & more!)
Basic whole-wheat dough recipe
1 1/2 cups hot water
1/3 cup oil
1/3 cup honey
2 tsp salt
1 Tbsp rice bran extract
1 tsp gluten
4-4 1/2 cups freshly milled flour (2 cups hard red wheat, 1 cup hard white wheat)
1 Tbsp yeast
(IF NOT USING THE BREAD MACHINE) Combine water, oil, honey and salt. Add lecithin, gluten, flour and yeast. Knead until smooth and elastic (about 5-6 minutes). Let rise until it doubles. Shape as desired and let rise again until it doubles. For 2 - 1lb loaves, bake at 350 degrees for 25-30 minutes.
(FOR BREAD MACHINE) Combine all ingredients in the pan, and then add flour and yeast on top. For 2 loaves: Let it mix and rise once in the bread maker. Take out and separate into two loaves and pout into 2 sprayed loaf pans. Heat oven at 350 degrees for two minutes. Put the loaves into the oven. Once the timer goes off, leave the loaves of bread in the oven for 30-45 minutes until it’s risen for a second time. Take the bread out, heat the oven to 350 degrees again and bake the bread for 20-25 minutes.
